Do you love cupcakes? What is your favorite flavor? One of my favorite is lemon cupcakes.

I don’t bake that often; I probably bake few times a year. Mostly on special occasions and holidays. When I do bake, I love making my lemon cupcakes from my Better Homes and Gardens cookbook. This is the recipe I used to make my lemon raspberry cupcakes.

I baked these lemon cupcakes one year for my husband and I’s birthdays. When I made the frosting, I added little extra lemon juice and lemon peel for extra flavor. I added sliced lemons for my topping on my cupcakes. The lemon slices could be candied if wanted.

Here is my recipe for lemon cupcakes.

If you have read my It’s All in the Lace Details post, then you would know that I love wearing lace. So when I found this lace top at JC Penney, I loved it. The top was on sale for a great price (plus 15% off), so I bought it.

You know what’s crazy? If you looked at my lace tops in my closet, you would see that they are either black or white. No colored tops. I don’t know why. I guess it just happened that way.

When it comes to teething for your infant/toddler, what do you do to relieve their pain? What are some ways to comfort your child when they are teething?

When it comes to teething, I’ve had lots of experience with my two girls, Katie (2.5 years old) and Sophia (17 months). My girls seemed to be in the most pain when their first few teeth and their first molars poke through. Teething can sure be a fun time. Not.

Raspberry Italian Chicken Sandwiches

Meal Monday is a weekly post series on the subject of food. I’ll talk about my love for food to sharing recipes that I love cooking to food tips.

Do you love having options of simple and easy meals to make for dinner? There are days that I don’t have time or don’t feel like making a complex dinner. Do you have those types of days? I totally do. Especially after a long day. I have a great healthy chicken sandwich idea for you.

I created the marinade for the chicken with what I had in my fridge/pantry. I put ingredients together that I thought sounded good together. The flavor of the chicken turned out great. I melted mozzarella on top of the chicken and added spinach and a slice of tomato to the sandwich. For a side with the chicken sandwiches, add fruit such as pineapple, strawberries, and raspberries.

Here is my recipe for raspberry Italian chicken sandwiches.
