Shrimp Stir Fry

Are you a big stir fry fan? I sure am. I make stir fry for lunch at least once per week. I either cook a chicken stir fry or a shrimp stir fry. Both stir fries are quick and easy to prepare, which is great at lunchtime.

If you love shrimp and stir fry, you’ll love this shrimp stir fry. The flavoring is very simple – all you need is chicken bouillon (or chicken stock) and soy sauce.

As far as vegetables, I either buy a bag of stir fry vegetables or use what I have in my fridge such as, onions, carrots, broccoli, and mushrooms.

Chicken Quesadillas with Toppings

We all have days where we don’t have much time to prepare a meal. What do you normally do? Make a frozen pizza, leftovers, eat out, etc? There are times that I do eat out instead of cooking something. Especially if I have to go somewhere that evening, such as grocery shopping. But there are other times that I buckle down and say no to eating out.

I love to have options of meals to cook that are quick to prepare. One of my options that is very easy to make and doesn’t take much time is Mexican food. Some of my favorites are chicken enchiladas, chicken tacos/salads, and chicken quesadillas.

I add toppings inside of my chicken quesadillas. I love having the additional flavor to the quesadillas plus I’m also getting vegetables in my meal.

Warm Bowl of Chili

It is definitely Fall outside. The leaves are changing colors and leaves are falling off of trees. So whenever colder weather hits, soup season starts. It is nice to eat a bowl of soup to help warm you up when it is cold outside. Do you eat soup year round or only during the Fall/Winter?

Chili was the first soup I made this fall season. I also love to cook chicken noodle with homemade noodles. What is your favorite soup to cook?

Whenever I cook chili, I like to make a bigger portion for leftovers. There are times I like to use the leftovers and have chili dogs or travel tacos with Fritos. How else to you use your leftover chili?

Chicken Cordon Bleu

One of my husband’s favorite chicken meals is chicken cordon bleu. He especially loves the honey mustard sauce that is drizzled over the chicken. The flavors of the chicken, ham, Swiss cheese, and honey mustard sauce is a perfect mix.

The recipe I use to make my chicken cordon bleu is based on the recipe in the Cook This Not That! cookbook. Instead of buying panko bread crumbs, I make my own croutons and crush them to make bread crumbs. It is very easy to do if you have a toaster oven. The recipe calls for a Dijon mustard, but I use whatever mustard I have on hand such as Grey Poupons’s deli mustard.

Raspberry Italian Chicken Sandwiches

Do you love having options of simple and easy meals to make for dinner? There are days that I don’t have time or don’t feel like making a complex dinner. Do you have those types of days? I totally do. Especially after a long day. I have a great healthy chicken sandwich idea for you.

I created the marinade for the chicken with what I had in my fridge/pantry. I put ingredients together that I thought sounded good together. The flavor of the chicken turned out great. I melted mozzarella on top of the chicken and added spinach and a slice of tomato to the sandwich. For a side with the chicken sandwiches, add fruit such as pineapple, strawberries, and raspberries.

Honey BBQ Chopped Chicken Sandwiches

Do you have those days that you don’t have much time to prepare a dinner? Do you need a meal idea that takes less than 30 minutes to prepare? I have something for you.

These honey bbq chopped chicken sandwiches are perfect to make when you are in a rush to get dinner on the table. Additional toppings can be added to your preference. A side with the sandwich can be something like carrots sticks and slices of apples.

I love making these honey bbq chopped chicken sandwiches in the summer time. It tastes great on a hot summer day. Sometimes I add a creamy flavor to the top of the chicken – freshly smashed avocado made into guacamole.

Chinese with Peanut Butter Chili Sauce

What is one of your favorite meals? My husband loves it when I make Chinese. I make a quick and easy stir fry and a Chinese pasta with a peanut butter chili sauce. I once tried a different sauce to try something different, but it just wasn’t the same. So now I stick with my peanut butter chili sauce whenever I’m making Chinese with pasta.

When I started making this Chinese pasta, I used a recipe I found in a magazine. I’ve used the piece of paper from the magazine so much that it is slightly wrinkled and has some splashes of food on it.

When I make my peanut butter chili sauce, I add couple other ingredients to make the sauce my own. I love adding sweet chili sauce and Chinese mustard to add a little kick to the pasta. Tip: A small amount of Chinese mustard goes a long way.

If you have kids who doesn’t like spicy food, dish their Chinese up before you add the sweet chili sauce and Chinese mustard. That is what I do for my girls, so the pasta isn’t spicy.

Slush Burgers

What are slush burgers? Slush burgers are similar to sloppy joes, but a little bit different.

I was first introduced to slush burgers when I married my husband. His family made them and I got the recipe from his mother. I added couple ingredients to the recipe to make it my own.

The sauce is made out of spaghetti sauce and little bit of salsa. The salsa makes the slush burger little too spicy for my girls, so I dish their food out before I add the salsa to the sauce. That way they can still eat the slush burgers without spice and we can have the spice.

Orange Chicken

I cook chicken with two sides every week. To make things different, I like to switch up the flavor. I love cooking lemon chicken as well as orange chicken.

Orange chicken is a healthy option for a meal. The citrus from the orange gives the chicken a sweet flavor and leaves it nice and moist.
