Chicken Quesadillas with Toppings

We all have days where we don’t have much time to prepare a meal. What do you normally do? Make a frozen pizza, leftovers, eat out, etc? There are times that I do eat out instead of cooking something. Especially if I have to go somewhere that evening, such as grocery shopping. But there are other times that I buckle down and say no to eating out.

I love to have options of meals to cook that are quick to prepare. One of my options that is very easy to make and doesn’t take much time is Mexican food. Some of my favorites are chicken enchiladas, chicken tacos/salads, and chicken quesadillas.

I add toppings inside of my chicken quesadillas. I love having the additional flavor to the quesadillas plus I’m also getting vegetables in my meal.

Bite Sized Snacks

Are you hungry for a snack and don’t know what to have? I have several snack options for you. Most likely, you have almost every ingredient in your refrigerator and pantry.

What I love about these snack options are that they are bite sized. Don’t you love bite sized snacks? These snacks are very easy to prepare and only require few ingredients. Each snack is served on a different kind of cracker with several ingredients on top.

Chicken Enchiladas

Today is the first day of Meal Monday. It is a weekly post series on the subject of food. I’ll talk about my love for food to sharing recipes that I love cooking to food tips.

Who would like some Mexican food right now? I love Mexican food anywhere from tacos to enchiladas. What enchilada sauce is your favorite – green or red? For myself, I would have to choose green. My husband and I have tried making enchiladas with the red sauce, but we couldn’t finished eating them.

I make my chicken enchiladas very simple. I use canned green sauce. I don’t make my own special sauce. Sometimes I like having simple meals on certain days.
